I created this open-faced enchilada with an egg on top in 1975 because this is one of my favorite New Mexican meals. I used an “I” hook with the least expensive acrylic yarn I could find. I used the brightest yellow and with whitest white that I could find for the egg. I used a variegated green to white yarn for the lettuce. The beans are made form light brown yarn. The cheese is yellow yarn that is not as bright as the egg yolk.
